Joan's Blue Berry Pie

I have never been fond of Blueberry Pie as I really don't care for cooked blueberries. So,

a few years ago I developed this EASY delicious pie recipe. Is it a big hit each time I make it. I hope you like it too.


CRUST

1 1/2 C FLOUR

2 T SUGAR

1/2 t SALT

1/2 C OIL + 2 T

2 T MILK

PRESS INTO PIE SHELL AND BAKE AT 425 UNTIL SLIGHTLY BROWN


FILLING:

1 C BLUEBERRIES

3/4 C SUGAR

1/4 C CORNSTARCH

1/4 t SALT

1 C HOT WATER

1 Teaspoon LEMON JUICE

COOK ABOVE MIXTURE UNTIL THICKEN.


FRESH BLUEBERRIES

3 1/2 Cups BLUE BERRIES (RAW) ADD THICKEN MIXTURE TO THESE AND STIR WELL

ADD TO BAKED CRUST


CRUMB TOPPING

1 Cup SUGAR

1 1/2 FLOUR

1/2 C BUTTER -SOFTEN AT ROOM TEMP

MIX UNTIL CRUMBLY. DO NOT USE MIXER. I USE FOOD PROCESSOR.


ADD BLUEBERRY MIXTURE TO BAKED CRUST, COVER WITH CRUMBS AND BAKE 425 UNTIL BROWN ABOUT 15 MINUTES. IF EDGES OF PIE SHELL GETS TOO BROWN, COVER WITH FOIL.
