Peaches, peaches

I love peach pie. My Mom always baked me a peach pie for my birthday. So, yesterday I baked a peach pie for one of the guys we play cards with on Saturday night. It was a big hit and I thought I would share the recipe with you today.


1 cup sugar

2 TBS Flour

2 TBS Soften butter

3 eggs well beaten

5 large peaches, peeled and sliced (or enough to fill up your pie plate.\


Crust

1 cup lard

3 cup flour

1 tsp salt

6-8 Tablespoon of ice water.


Mix up your crust and roll it out and place into your pie pan. (You might have your own crust recipe or perhaps you buy one)

Mix the sugar mixture together until crumbly and put half in the

bottom of an unbaked pie shell. Lay sliced peaches on

top of sugar mixture to fill shell. Beat 3

eggs and pour over top of peaches and then sprinkle remaining

sugar mixture over the top. Bake at 400 until knife

comes out clean and custard is set. I think I baked mine

for about 40 minutes, but tested at 30.
